Who doesn’t crave for a delicious slice of cheesecake every now and then? But the thought of preparing and then baking and finally waiting for it to cool can be tantalizing not to mention teasing. With that in mind, here is a simple cheesecake recipe that is simple to prep and even easier to make because believe it or not, it does not require a minute of baking. Too good to be true? Try it out and you will be wonderfully surprised. Let’s get cheesy.
Here are the ingredients required.
100 Grams of melted butter.
250 Grams sweet biscuits.
600 Grams soft cheese.
1 Vanilla pod.
284ml double cream.
100 Grams icing sugar.
For the topping (choice)
400 Grams strawberries halved and pitted.
25 Grams icing sugar.
In a baking tin (23cm), place a baking parchment paper and line it with butter. Take the 250 grams of biscuits and place them in a zip lock bag and crush them with a rolling pin or mallet.
Remove the crumbs into a bowl and pour the melted butter (100grams) over it till the biscuits are completely covered.
Now, empty the biscuit crumbs into the baking tin and press down to make the base even.
Place the tin in the fridge to chill and set for an hour. Next, take the vanilla pod and slice it down the middle keeping one end of the pod connected. Use a spoon or the back of a knife to remove the seeds easily.
In an electric mixer, pour the 100 grams icing sugar and the 600 grams soft cheese and mix well with the
vanilla seeds till the mixture is smooth.
Now, pour in the 284ml double cream and continue mixing the cheese filling.
When it is properly mixed, pour the filling into the baking tin making sure no air bubbles are left in the tin.
Place the tin in the fridge and let it chill and set for a minimum of 2 hours (overnight is advised).
Let the cheesecake rest in room temperature about an hour before serving.
For the topping, place 200grams of the strawberries into a blender with the 25 grams icing sugar and a
tablespoon of water till a puree is formed.
Sieve the mixture and keep it aside.
Slice the rest of the strawberries and place them on the cheesecake and pour the puree over it and it’s done.
